A passion for ingredients
My ethos is that no two batches of ingredients are identical and I strive to treat them like the unique items that they are. No two batches of apples are exactly the same, flavour changes based on when they were harvested, how long since they’ve been picked, the soil the trees grew in and a myriad of other factors, so why would two batches need the exact seasoning every time?
This is why we make our sauces often and in small batches, so we can work with the quirks of every batch of ingredients, not just blend them all together. They may not be identical from batch to batch but they’re better as a result.

I’ve been working as a chef for 20 years, over the last decade I’ve been head chef at 3 different 2 rosette hotels and I’m now turning my attention to my own business. Outside of work I like finance and the stock market, heavy metal, board games and adventure holidays.

By day a professional sonographer, by evening; taste tester and labelling supremo. Holly is also an avid photographer, board gamer and loves a remote hike.

4 years old and yet to choose a career. Interests include being aloof, hiding and attacking Holly’s feet.
